This wine with a certain alcoholic strength, delicately expresses its red fruit flavors : strawberry, blackcurrant, kirsch at the finish. A persistent and supple strength coats your palate, refined and elegant in its harmony. Soil : Our own domaine of 30 hectares in TAVEL with old vines of up to 85 years old, growing in a sandy, pebbly soil particularly suitable for rosé wine production. The vines extend along gentle south-facing slopes of ancient sea beds benefiting from full exposure to the sun. Alcoholic strength : 13,6% vol. Total acidity : 4 g/l Total SO2 : 40 mg/l Grape varieties : Grenache 60%, Clairette 30%, Syrah 10%. Average age of the vines 60 years. Vinification : The grapes are handpicked early in the morning when it is cool. First there is a cool maceration of six to twelve hours to extract the primary aromas, then fermentation at 16°C enables the yeasts to develop red fruit aromas. Production : 20 000 Tavel-embossed
bottles of 75cl each. Serve with : A versatile wine. Enjoy as an aperitif and with charcuterie, fish, spicy and Asian dishes, soft cheese, chocolate and fruit desserts. |
