Vinification: maceration on the skins for approx. 7 days in tanks with temperature control. In a second phase, the grapes are pressed off the skins and alcoholic fermentation is completed in steel tanks for about 10 days. Following the wine is put into 40 % new French barriques  and 60 % into used ones, in which the process of malolactic fermentation is made at a temperature of approx. 20° for about 2 months. This barrique process lasts for a period of 18 months. Refining is completed by a further 6 months phase into a big barrel. At last, wine is put into stainless steel tanks to settle and then to be bottled without filtration. These coricate laying bottles still stand for 8 months in the cellar.

Colour: ruby red with garnet reflections

Nose and Taste: fresh scents of small red fruits, rasperries, redcurrant and wild roses which evolve into licorice and spice notes. It has a rich and complex taste due to its numerous tannins and its acidity which give it an elegant note. Barolo Chirlet reminds entirely to the territory characteristics of Monforte.

Recommended Temperature: 17°-18°. It is enjoyable to appreciate the initial freshness and experience the evolution of the wine as it warms up in the glass

Description: when the wine first enters the market, it is fresh and a little austere, but still harmonious and balanced. With time, the wine softens a little, but maintains the initial character for many years, particularly if stored in an ambient place that is fresh and humid without temperature variations.
