Clones: CVT 71, CVT 63, CVT 66, CVT CN 142, VCR 153,VCR 152 Grafts: 420 A, 161-49 Courderc, S.O.4 Surface Area: about 1 hectar Vines per Hectar: 5500 Grape Yield per Hectar: 7 tons per hectare Vine Trellising System: Guyot Produced Bottles: about 5000 Selling Beginning: September Vinification: maceration on the skins for approx. 6 days in rotary fermentors with temperature control. The grapes are then pressed off the skins and the alcoholic fermentation is completed in steel tanks in about 15 days. The wine is now put into second and third phase French barriques in which the malolactic fermentation takes place maintaining the 20° temperature for 2 months. After this fermentation, the wine stands for other 6 months. This refining process in wood ends when the wine is put into big barrels for further 4 months. The wine remains in barrique for a total of 12 months and is then put into stainless steel tanks to settle and then to be bottled without filtration and fining. Before selling, the wine stands in the bottles for 3 months Colour: intense ruby with garnet reflections Nose and Taste: fresh aromas of roses and red fruits, medium bodied. It is round and delicate and gives harmony to the typical complexity of Nebbiolo and to a pleasant freshness as a result of the brief time in wood and bottle. The further time in bottle will define its peculiar taste and complexity for approx. 10 years. Recommended Temperature: 15°-16°. It is enjoyable to appreciate the initial freshness and experience the evolution of the wine as it warms up in the glass Description: recommended to drink now to 9-10 years Alcohol: 14.00 by vol.
