2006 had a rainy spring and a relatively dry and stormy summer.
Fall was hot with storms and little rain.
The harvest went well, under good conditions, between September and
October 20.

30% Colombard
15% Gros Manseng
5% Sauvignon
50 % Ugni blanc
Vinification
Each cepage is harvested individually.
De-stemming at harvest - Maceration on skins for the Colombard, the Sauvignon
and the Gros manseng
Pneumatic press
Cold-stabilization and fermentation at 18 degrees Celsius
The assemblage was done in February 2007
Comments
Dry white wine, fruity with good liveliness in mouth
Altogether balanced and harmonious
Soft finish
Serve with grilled fish, barbecue, cold buffet and cheese
