                 Soil

                 Quartz terraces with large pebbles exposed at South, South-                 East.

                 Composition de cépages

                 100 % MERLOT
                 Vines are in average about 12 years.
                 Yielding : 50 Hl / Ha
                 Vinification

v       Grapes are harvested at perfect sugar/acidity balance

v       After destemming, they are cool down at 7°C and soak during 12-15 days.

v       At 13°C fermentation begins and continues for 10 to 12 days.

v       Short post fermented maceration for 4 to 6 days.

v       Dripping according to tasting.

                 Maturation

                 After four months of ageing on fine lees, the wine is fined (with                  gelatine), then filtered (at 1.5-2µ).

                 Characteristics

v     Deep red colour with ruby highlights.

v     Smoky and aromas of jammy red fruit.

v     Dominant in flavour and complex.

v     Tannins are ripe and round.

                 Serving temperature

                 Serve at room temperature.

                 Food matches

                 Soups and salads made with cold cuts, meat and cheese or simply                  everyday fare.
