Vines are in average about 12 years.Yielding : 50 Hl / HaQuartz terraces with large pebbles exposed at South, South-East.
MaturationAfter four months of ageing on fine lees, the wine is fined (with gelatine), then filtered (at 1.5-2µ).
CharacteristicsDeep red colour with ruby highlights. Smoky and aromas of jammy red fruit. Dominant in flavour and complex. Tannins are ripe and round.
VinificationGrapes are harvested at perfect sugar/acidity balance After de-stemming, they are cool down at 7°C and soak during 12-15 days. At 13°C fermentation begins and continues for 10 to 12 days. Short post fermented maceration for 4 to 6 days. Dripping according to tasting.
