Vines are in average about 12 years.
Yielding : 50 Hl / Ha

Quartz terraces with large pebbles exposed at South, South-East.

 

 
Maturation

After four months of ageing on fine lees, the wine is fined (with gelatine), then filtered (at 1.5-2µ).

 

Characteristics

Deep red colour with ruby highlights.

Smoky and aromas of jammy red fruit.

Dominant in flavour and complex.

Tannins are ripe and round.

 

Vinification

Grapes are harvested at perfect sugar/acidity balance

After de-stemming, they are cool down at 7°C and soak during 12-15 days.

At 13°C fermentation begins and continues for 10 to 12 days.

Short post fermented maceration for 4 to 6 days.

Dripping according to tasting.
