25 % CARIGNAN - 25 % MERLOT

25 % GRENACHE - 25 % SYRAH
 

Vineyards are in average 20 years old.
Yielding : 50 Hl / Ha

 

Pebbled sandstone terraces. Exposition South, South-East

 

Maturation

After 3 months of aging in oak barrels, wines are blended in vats and kept on fine lies during another 3 months.

Wines undergo a slight filtration then are bottled.

 Characteristics

Deep garnet colour.

Aromas of red fruits and spices.

Fresh and round.

Blackberries and cherries on the mouth.

 

Vinification

Dripping according to tasting.

Grapes are harvested at full sugar/acid maturity.

After de-stemming of grapes they are chilled at 7°C.

Pre-fermentation maceration during 10 to 12 days. Fermentation begins at 13°C and ends at 27°-28° after 12 days.

Pressed wines are treated separately are then blended according to tastings.
