The same vinification methods are applied on all our wines : The bunches are picked up in cases of 15 kg, cooled down at 12° C. in our cool chamber for 24 hours. Destemmed and sorted by the berry to avoid all vegetal hints, pressed in a vertical press. The juices are vinified in 500 litres oak barrels and aged 10 to 14 months This wine is made from a blending from our vines in Saint Chinian and very old Cinsault and Carignans from Minervois. (The Saint Chinian is vinified out of the appellation so we can not declare it in this AOC.) The blending is made of 40% Cinsault, 30% Carignans, 20% Syrah and 10% Grenache. We produced in 2005 a total 11 500 bottles. The average yield is 27 hl/ha and 70% of the wine is gaed in concrete tanks for 30% in 228 litres barrels of 2 or 3 years. |
