Vineyard
Short pruning, tall espalier training, surface tillage, de-budding
and cluster thinning all make for low yields of 30 to 35 hectolitres per
hectare.
The grapes are picked by hand
using small crates.
Vinification
De-stemming.
Traditional maceration of 3 to 4 weeks. Drawing-off and « pigeages ».
Barrel-ageing on the lees for twelve months, followed by another year in vats,
enhances the bouquet.
Tasting
