The Bouchet family “is one of the pioneers in ‘bio-dynamie’ " (Revue du Vin de France, “Classment” 2005, p. 509) —Mathieu’s father is consultant to many of the top domains in Burgundy on bio-dynamic practices—and the family owns the tiny (6 ha.) Domaine de Chateau-Gaillard  near Montreuil-Bellay in appellation Saumur.

In addition to employing bio-dynamic viticulture, Mathieu has the advantage of having very old vines here (many 80 years old).  He practices a long elevage in older (no new oak at all) barriques, and bottles without fining or filtration.  This is very rich, very natural, and very drinkable Cabernet Franc.
