Domaine David Clark
 

The wines being produced today are the realisation of the owner's long-held dream. Fascinated by wine since the age of 18, David finally left his "real" job in 2003 to study at the Lycée Viticole de Beaune. The following year saw the purchase of a small vineyard and winery, and thus the birth of the Domaine David Clark.

The winery is situated in the small village of Morey-Saint-Denis, in the heart of Burgundy's famous Côte de Nuits. This narrow strip of land is home to many of the world's great Pinot Noir wines. Vineyards such as le Chambertin, le Clos de Vougeot and la Romanée-Conti have been making fabled wines since at least the 11th century

Domaine David Clark now owns 2 hectares of vines, in the communes of Morey-Saint-Denis, Chambolle-Musigny, Brochon and Flagey-Echezeaux.

All our vineyards are organically tended using the following techniques

  1. Ploughing and mowing to control weeds. Never any weed-killers.
  2. Ultra low yields
  3. Extreme rigour in all aspects of hand tending the vines.
  4. Hand de-leafing to promote grape ripeness and colour
  5. Strictly organic spray program to control diseases and pests.

The domaine's winemaking is characterised by the following methods

  1. Hand harvesting into small cases (50 litres) at full maturity
  2. Total avoidance of all non-essential additives or manipulations.
  3. Aging for 15 months in small French oak barrels, of which only a small percentage are new.
  4. Bottling by hand without fining or filtration.
