Chablis 2004Vieilles Vignes Sélection Massale
Grape-variety : Chardonnay. Geology & Soils : Marls and calcareous clayey from the kimmeridgien period. Orientation South- south-west. Vineyard : 43 years. 4 ha. 35 hl / ha. Double cane Guyot pruning. Vinification : 100% hand harvested. Static settling. Fermentation's and maturing in oak casks. Malolactic fermentation completed. Clarification by racking and fining agent, bottled unfiltered. Analysis : Alcohol: 12.50 vol. Acidity: 4.13 g/l. Sugar: 1.33 g/l. Evolution : To taste from 2005 to 2010. Service : Seafood, especially shellfish, dish of fish or poultry with sauce. Serve between 10-12°C.
This vineyard, situated in the lieu-dit of Les Pargues, was replanted over 40 years ago using a technique of propagation whereby cuttings for the vines were selected from the best vines already in the vineyard and not from a clone. This rarely used technique is known as “Selection Massale”. These old uncloned vines produce extremely tiny yields and express a diversity of aromas from the Chablisien terroir. The colour is a bright yellow with green/grey reflections. The nose is very fine and elegant with notes of yellow fruits and white flowers. One also finds notes of cream which gives a warm impression. The palate is sharp and fresh. It remains slightly closed and only asks to express its fresh yellow fruit flavours. A beautiful balance. A wine which will benefit from 3 to 4 years of ageing.
