Chablis Pargues 2005

 

 Grape-variety :      Chardonnay. 

Geology & Soils :   Marls and calcareous clayey from the kimmeridgien period. Orientation South- south-west. 

Vignes :                    27 ans. 11.43 ha. 56 hl / ha. Double cane Guyot pruning. 

Vinification :          Manual and mechanically harvested. Static settling. Fermentation's and maturing in stainless steel tanks. Malolactic fermentation completed. Clarification by racking and fining agent, bottled unfiltered. 

Analysis :                 Alcohol:             12.95 vol.
                                    Acidity:                4.01 g/l.
                                    Sugar:                  2.52 g/l. 

Evolution :              To taste from 2006 to 2012. 

Service :                   Seafood, especially shellfish, dish of fish or poultry with sauce. Serve between 10-12°C.

The robe is yellow with golden green reflections.

The nose is delicate and complex with distinct mineral aromas followed by white flowers and citrus (lemon).

A very elegant nose.

On the palate, one finds fresh yellow fruits with distinct fresh citrus. The palate is rich and round with a fresh finish!
